>Low cal way of cooking

Update hari ni khas untuk readers yang teruja tengok our low calorie food yang I tayang hari2. Like we said, we are not on a strict diet, it’s more of a lifestyle change.

We still eat normal food but I alter the ingredients to make the food lower in calories and a bit healthier. I guess the only thing yang I have stopped doing for now is deep frying (and baking cakes). Tu yang bekalan canola oil I masih berlitre2 lagi dalam store room tu! I selalu beli canola oil in a 20litre/pack which will last us a long time. And I baru aje beli bulan 11 hari tu, so sekarang that box masih penuh and rasanya mau kot bertahan untuk 1 tahun, hahahaSmile.

Even The Other Half yang jarang makan fresh fruits, bila start healthy diet ni akan bawak bekalan fresh fruit to work hari2. Nasib baik lah Summer fruit still banyak in season so mostly hari2 I akan beli plums, pluots, apricots, nectarines, grapes, rockmelon, kiwi to fill the fruit bowl. Dia kata, tak pernah dia makan fruit sebanyak yang dia makan sekarang ni, hehehe.

Steam-frying method:

“Steam-fry” simply means sautéing without fat/oil. To do
this, I use a non stick pan or wok, sprayed sparingly with oil from a
pump sprayer, or with cooking spray.

(It depends on apa yang I masak, kadang2 I tak spray pun with oil and they still taste good.)

This is how I did the Oil-less vegetarian mee goreng:

-Heat the non stick wok over medium heat, add the chopped onions/ garlic/ ginger/ chilli paste, then add one or two tablespoons of liquid (water or stock), depending on the amount of vegetables. Do not put too much vegetables in the pan, or your vegetables will “stew” instead of “fry”.

-Cook over medium to high heat until the liquid starts to evaporate, stirring with a spatula or wooden spoon. Keep stirring until the vegetables are done to your liking, adding JUST ENOUGH liquid to keep the vegetables from sticking to the bottom of the pan.
You can stop when the veggies are soft, but not brown, or you can keep on until they brown a bit.

-(If you letak chilli paste/boh, you kena letak air banyak sikit so it has time to cook without it being hangit.)

-Once the onion/ garlic/ ginger/ chilli combo is cooked, then you can start adding other vegetables (like julienned carrots, beans, capsicum). Add some more liquid and cover the wok with a lid to steam the veges until half cooked.

-(If you want to do meat-based mee goreng, you can add diced chicken or diced beef or seafood at this stage before the vegetables. Increase the heat a bit to ‘goreng’ the meat. You dont need to add water masa masak the meat, they cook nicely on the non stick.)

-Then add the rinsed fresh noodles (I guna 500g untuk 6 orang makan). I cuma rinse the noodles in cold water sebab I tak nak dia kembang sangat. And most fresh noodles have a bit of oil in them anyway so tu yang tak perlu guna minyak untuk meng’goreng’.

-Once you’ve added the noodles, I added some kicap cair (around 2 tablespoon) and then 1 teaspoon of kicap manis and some more water to cook the noodles and the veges. Masa ni tak payah cover the wok, but you just have to keep on stirring (macam you menggoreng lah). Then I added some taugeh.

– If you letak too much kicap or tomato sauce or chilli sauce, it will increase the calorie count as well. So, just bear that in mind.

-Macam buat mee goreng basah but without too much liquid. Liquid tu just enough to lembutkan the noodles aje.

-(kalau you have added meat or tofu or what not, the calorie count will be higher lah sebab calories in meat and tofu are higher than veges.)

– Once cooked, just tambah salt and pepper according to taste.

Easy kan Smile.

The oven-baked fish pulak, I used this recipe but I reduced the amount of soy sauce and I added a bit lof lemon juice to it and I tambah sliced fresh chilli.

And last night, I made pizza. Every Friday night for the past few weeks, I buat pizza sampai menyampah I tengok pizza tu (but still boleh telan lagi, hahaha).



Our low calorie chicken pizza version. Macam mana I boleh reduced the calories? By reducing the amount of cheese I used and substituting them with the low fat version Smile.

For this large pizza, I cuma guna 25g of low fat cheddar cheese and guna 100g bocconcini cheese instead of mozzarella. Kalau you all tak jumpa low fat cheddar or bocconcini, you can still use normal cheddar and mozzarella.

The trick to only use a small amount of cheese and stretching it to cover 1 large pizza nicely is to use the small grater.


See, this is my grater. I used to guna the grater on the right side to grate my mozzarella and cheddar for my pizza. Jadi the cheese were grated into big slices so you need more to cover the pizza.

But now, I use the left side of the grater to grate my cheeses. The cheese yang di grated akan keluar so halus and ‘weightless’. So, when I grate 25g of cheese, nampak macam banyak sangat I dapat and dapat tabur them to cover 1 large pizza.

And I increase the amount of veges on the pizza and do thin base instead of thick base. And I grilled the skinless chicken I used in the pizza.

Kalau I masak green chicken curry pulak. I will use light coconut milk instead of the full fat version and skinless chicken fillet as well.

The lasagne yang I masak the other day, I loosely follow this recipe. But I used cottage cheese instead of ricotta and I only used 200g cottage cheese aje pun.

With lasagna, it’s the white sauce and beef mince with the fat that brings the calories up so try to reduce the amount of white sauce and cheese you use to make it.

Every little bit helps I guess Smile.


>Sunday without Bianca :-)

Today is Sunday (macamlah ada yang tak tau, hehehe) and Cyclone Bianca has decided to pass us by without doing any stopovers, Alhamdulillah. But it would have been nice to have had a little bit of rain from Bianca though Smile.

Kat rumah I ni, kalau weekend or when everyone is at home, I noticed that there seems to be so many water glasses/tumblers lying around everywhere in the kitchen.

I heran betul lah sebab kat rumah ni cuma ada 4 orang aje tapi kadang2 tu the glasses/tumblers yang lying around adalah dalam 10 macam tu kot.

Bila I tanya The Little Misses and The Other Half sape yang guna gelas berlambak2 tu, takde sorang yang mengaku and semua buat muka heran…

Ini yang buat I sangat2 mushkil, sejak bila pulak rumah I ni ada simpan benda2 halus or orang bunian or invisible friends yang terer minum air bergelas2 ni ye?

Bila I duduk rumah sorang2, tak pulak benda misteri ini berlaku, 1 aje gelas from morning till the others come home….


Kena letak cctv cameras lah around the kitchen kan kalau nak nab the culprits, hikhikhikhik… Winking smile

Malam ni for dinner, I made grilled polenta (I beli yang instant dah siap tu) and makan dengan grilled lamb chops with its jus and bocconcini, grilled eggplant and green salad.


I’m not sure if I got it right or not though, my plate ni is only around 300cals aje which is not much langsung kan! But sangat2 mengenyangkan and yummy….


I cuma makan sekeping aje polenta tu because dah kenyang, hehehe…

The gravy/jus we ate with the lamb tu I buat senang aje.

Ini recipe gravy yang I selalu buat.

After you’ve grilled the lamb, jangan basuh the grill pan. Keep the heat on low and add a teaspoon of butter to it until it has melted.

Then add about a tablespoon of plain flour and cook it for about 1-2 minutes. Then add some water as much as you want to. Add some soy sauce/kicap masin to taste and then let it simmer until the gravy’s reduced/thickened a bit.

Pastu, bolehlah makan dengan your chops or steak! Tak payah susah payah beli gravy powder.

The Other Half dah merajuk sebab all the comments on yesterday’s N3 takde satu pun yang ‘puji’ kata his pasta looks delicious. Dia kata penat aje dia masuk dapur berpeluh2 berperang dengan periuk belanga. Terus dia merajuk tak nak masuk dapur lagi dah! Hikhikhik….

Tu lah korang, sape suruh tak puji, kan I jugak yang susah sekarang. Takde lagi lah chance I nak bersenang lenang jadi mandur aje lepas ni sebab tukang masak jemputan dah merajuk tak nak masak!

Dia kata, next time suruh ajelah Miss 7 masuk dapur sebab semua puji choc chips dia obviously dia lagi terer masak dari Dad dia kan Open-mouthed smile.


Nyampah I orang tua2 merajuk ni, hehehehe….

Choc chips yang Miss 7 buat tu I dapat recipe nya dari buku masakan Australian Women’s Weekly ‘Kids in the kitchen’. Tak silap I, this was one of the Christmas presents for Miss 11 from me a few years ago.

Miss 7 kata she has to learn more measurements at school next year and her Yr 2 teacher told them to learn this measurements by learning how to cook. So, tu yang dia beria nak masak and this book is really good for kids.

Chunky Choc chip cookies


  • 125g softened butter
  • 1 tsp vanilla
  • 1 cup (240g) firmly packed brown sugar (recipe asal used 275g brown sugar tapi I kurangkan sbb tak nak manis sgt)
  • 1 egg
  • 1 cup (150g) plain flour
  • 1/4 cup (35g) self raising flour
  • 1/2 tsp bicarb soda (I used baking powder)
  • 1/3 cup (35g) cocoa powder
  • 1/2 cup (100g) peanut M&Ms (I tak letak cos Miss 7 tak makan peanuts)
  • 1/3 cup (70g) mini M&Ms (I letak 1/2 cups)
  • 1/2 cup milk choc melts (I guna white choc chips)


  1. Preheat oven to moderate 180°C (160°C for fan-forced). Lightly greased/use baking paper 2 oven trays.
  2. Beat butter, vanilla extract, sugar and egg in a big bowl with electric mixer until smooth (do not overmix).
  3. Sift dry ingredients together and mix into the butter mixture using wooden spoon. Then mix in all the chocolates until wel combined.
  4. Place level tablespoons (20mls nya tablespoon) of the mixture onto trays, allowing 5cm between each cookie. (I guna ice cream scoop sebab lagi senang Miss 7 nak handle but lagi besar lah jadi nya. And I bulat2 kan sikit bagi sekata rupanya before letak atas tray).
  5. Bake about 10 minutes (I bake for 10 minutes for the big ones because I suka yg fudgy n chewy not crunchy)
  6. Stand cookies on tray for 5 minutes and transfer to wire rack to cool.

Senang aje kan nak buatnya. Tu yang Miss 7 pun boleh buat cuma took a bit longer lah (ye lah nak baca recipe 2-3 kali, pastu nak kena make sure semua measurements betul, pastu asik cakap aje non stop). I had to tell her banyak kali, ‘less talk and more work please!Smile.

Hari ni the temperature got up to 40.7°C so I memang tak rasa nak makan berat langsung (konon2 nya lah, hehehe).

I pun buat grilled beef with thai marinade/dressing for the adults and grilled beef with honey soy marinade/dressing for The Little Misses.


I makan dgn roast sweet potatoes, sliced cucumbers, grape tomatoes, capsicum and rice noodles. I guess you can call this a main dish salad kot Smile. I guna 2 biji chillies aje tau tapi terbakar lidah I tadi makan! Pengsan sekejap, hahahaha.


Bila lah agaknya lidah I ni nak kebal makan chilli ye?

>Petai Mat Saleh

Orang M’sia selalu associate petai dengan smelly urine or air kencing berbau. I tak sangkan lah yang Mat Saleh ni pun actually ada equivalent vegetable yang meng ‘smelly’ kan urine macam petai ni. Selama2 I makan vege ni, I tak pernah terperasan (or maybe I tak associate that vege with smelly urine so bila the urine smells lain macam, I thought it’s because of something else, hehehe).

Until The Other Half complained yang he loves eating this vege except for what it does to his urine. I pun pelik lah, pastu I cakap dengan dia yang selama2 ni I makan, takde pun bau apa2. Pastu dia kata, next time I makan this sayur, just smell the toilet bowl after I pee, t tell him again if it smells or not, hehehe.

Pastu I pun buatlah experiment (just to prove him wrong Winking smile), but unfortunately, it was me that was proven wrong, hehehe. Memang out of a sudden, baru lah I perasan yang air kencing memang akan berbau selepas makan this vege.

Nak tau apa vege yang ala2 petai ni?




We had grilled asparagus, BBQed sausages and pasta salad malam tadi so the toilet really stinks! hikhikhikhik….

Betul you, I baru aje tau yang bila makan asparagus, our urine will smell, hehehe.

But The other Half said to me tadi, “For me, petai doesn’t really make your pee smell!” takpe, next time I masak petai, I suruh dia smell the toilet bowl pulak! Wakakakaka…

Malam ni pulak nya, we all makan pasta lagi even though last night dah makan pasta. I made beef ragu for dinner and ingat nak makan dengan polenta but bila selongkar pantry, couldn’t find polenta so kenalah makan dengan pasta.



Ragu ni lebih kurang bolognese sauce lah but cuma guna tomato paste only for the red colour and guna fresh milk and apple juice(to replace wine in the original recipe) in the sauce. Rasa dia lain sikit dari sauce yang guna canned diced tomato or bottled pasta sauce ni. We think it’s a bit richer in flavour. But definitely takde rasa susu! hehehe.

Ini my version of the beef ragu recipe:


1 small brown onion, diced finely
2 cloves garlic, diced finely
1 carrot, diced finely
1 celery, diced finely
500g beef mince
1/2 cup apple juice (unsweetened/no added sugar)
4 tbsp tomato paste
3/4 cup milk (I guna low fat)
salt and pepper to taste


-heat 1 tbsp olive oil in a  frying pan. Sautee onions, garlic, carrot and celery for 3-4 minutess on medium heat until cooked.
-add beef mince and break any lump up and cook until all brown.
-reduce heat to low and add apple juice to the pan. Let it cook until all the apple juice have been reduced.
-add tomato paste and stir until well combined.
-add milk and let it simmer for about 15-20 minutes until reduced. Don’t disturb it.
– Then add salt (or if you like, chicken stock granules) and pepper to taste.
-You can serve it with pasta, frech bread or sourdough bread or polenta.

>Baru nak letak recipe

Minta maaf sebab dah lama janji, baru sekarang I letak the recipe for the fettucine. Ini lah susahnya bila masak main campak2 aje with whatever’s in the fridge, freezer and pantry so memang takde exact measurement. But I guess recipe campak2 ni lah paling best sebab it’s up to us to adapt it to our taste kan.

Sempoi creamy fettucine with chicken breast and broccoli

The ingredients:

-any long pasta eg spaghetti, fettucine, tagliatelle (amount depending on how many people are eating, prob about 300g for 3 really hungry adults)

-olive oil

-1/4 brown onion, diced

-2 garlic cloves, minced

-1 chilli (optional, kalau nak pedas, tambah chilli lagi)

-chicken breast, diced (amount is up to you)

-broccoli, cut into strips (if you like broccoli, put loads)

-1/4 cup fresh cream(you can use reduced fat or thick)

-salt n pepper to taste.


-Chop up all the onions, garlic, broccoli, chicken while you are waiting for the water for the pasta to boil.

-Cook pasta in boiling water until al dente.

-While the pasta is cooking, heat up about 2 tablespoons of olive oil in a frying pan. Sautee the onions until softened. Then add garlic, chilli if using, chicken and broccoli and pan fry them for a few minutes until the chicken’s cooked. Don’t overcook the chicken breast, or else jadi kering and a bit tough.

-Add about 1 senduk air pasta tadi to the chicken broccoli mix in the frying pan so tak lah kering sgt.

-Once the pasta dah al dente, drain it and add it to the frying pan.

-Add about 1/4 cup of cream, salt and pepper and stir them altogether and heat gently for about 1-2 minutes.

-Serve with grated parmesan cheese if you like.


>Easy peasy Pizza

We love pizza in this household. I can make it once a week or twice a week and no one will complain. I’m not sure whether it’s the bread and cheese combination yang membuatkan people drool over it or it’s the meat & veges combination that people like (as though! Hahahaha…..). But I think sejak I start buat blog ni, dah berdozen2 or beratus dozen gambar pizza yang I dah tayang kat blog kan ;-). Kalau boleh timbang berat the cheese yang I dah grated to put on the pizza, adalah berpuluh2 kilo kot, muahahahaha…..

Probably kalau I nak kerja kat Pizza Hut or kat Dominos, I boleh tunjuk my blog to them as my resume and they’ll hire me on the spot kot, hikhikhik… I pun sekarang ni kalau buat the pizza base, dah boleh pejam mata aje and tak payah tengok recipe, insyaAllah menjadi (eksen giler kan, wakakaka). Lagi lah sejak ada breadmaker ni, lagi senang I nak buat the base. Tinggal campak segala ingredients in it and then pegi ambik The Little Misses at school and by the time we come home, dah naik cantik aje. Pastu, tinggal siapkan the toppings, gelek the base jadi bulat cantik and then tinggal hias and bakar.

I selalunya akan buat pizza enough for dinner and for lunch the next day so The Little Misses and The Other Half can take it for lunch. Senang lah kerja I sebab tak payah susah2 fikir pasal nak kena buat lunch for them pagi2 morning tu kan :-).

Nak buat the base ni senang aje, you boleh pakai any recipe white bread yang you like or the simplest recipe just using flour, oil, salt, water and yeast. kalau ada bread flour kat rumah ni, I’ll use bread flour. Kalau dah habis, I will just use tepung gandum aje and it will still turn out great.

For toppings pulak, I’ll just use whatever yang I can find in the fridge and the pantry. Tapi yang mesti ada is pineapple! Tapi kat sini pineapple senang nak cari sebab I just use canned pineapple aje, hehehe. Toppings yang I selalu guna is poloni or salami or pepperoni or sausages or BBQ chicken or roast beef or marinara mix. Yang gerenti I takkan bubuh on my pizzas are olives and anchovies! I really cannot telan olives and anchovies ni, my hidung and tekak memang tak boleh terima the smell nor the taste. Anchovies ni yg Mat Saleh punya version, the ones in oil, not ikan bilis kita, hehehe.

The Other Half loves anchovies. Kalau dia nak makan anchovies, I akan buat separate pizza just for him with anchovies on it. Kalau I buat half-half and I termakan the anchovy even a tiny bit, I akan terus stop makan pizza tu sebab rasa macam nak ter buwekkkkk…… Hampeh betul I ni kan, hahahahahaha….

For dinner tadi, I buat pizza and I used the breadmaker recipe for the base which is:

Pizza Dough

  • 200mls air
  • 1 tbsp olive oil/canola oil
  • 1 tsp salt
  • 375g/2 1/2 cups flour
  • 1 3/4 tsp yeast

(This recipe will yield 2 large pizzas)

-Kalau guna BM, just campak in the container ikut turutan and then choose the pizza setting and bagi dia buat kerja sendiri while you buat kerja sendiri :-).

-Kalau guna tangan, campur kan air suam with the yeast and then biarkan for 15 minutes sampai berbuih. Kalau tak berbuih, buang aje yeast tu sbb nampak sangat dah matinya!

-Dalam mangkuk besar, gaulkan tepung and garam. Bila campuran yeast dah berbuih, tuangkan ke dalam mangkuk bertepung tu and then tambah olive oil and uli hingga adunan tu tak melekat kat tangan and bila di tekan dengan jari, it’ll spring back.

-Biarkan kat tempat yang suam until double in size. Make sure you tutup mangkuk tu dengan gladwrap or tuala lembap so dough tu tak kering ye.

-Bila dah double in size, boleh lah bahagikan ke 2 bahagian and gelek jadi leper setebal mana yang you nak.

-Then bolehlah bubuh pizza sauce (I beli aje), letak toppings yang menyelerakan and then tabur dengan grated cheddar and mozzarella.

-Bakar at 220°C until masak.

And ini gambar our pizza tadi. I made 2 versions, BBQ sausage pizza and seafood pizza (just for The Other Half 🙂).


Ini bukan my plate (tak kuasa I nak mengada2 pakai plate kayu, wehehehe). Ini cuma untuk ambik gambar aje :-D.


Marinara mix yang penuh dengan prawns, calamari, mussels and fish fillet. I tak berapa gemor makan yang ini.

So….. you rasa berdasarkan gambar2 kat atas ni, Domino and Pizza Hut nak tak lantik I jadi chef diaorang? Wakakakakakaka…..

>Roast chicken for dinner

I rang The Other Half today and asked him what he wants for dinner and he said, “I don’t know. I’ve had really lovely dinners the past few nights.” I said, “Owww…that’s nice of you to say that about my cooking :-).” Hehehehehe……

He even took some leftover beef sate and nasi impit and kuah kacang gajus to work for his lunch today. And bila dia heat up his lunch in the microwave, all his colleagues were really inhaling the lovely smell that came out of the microwave. Semua sibuk dok tanya apa yang he’s having for lunch, kahkahkah. Bau kuah kacang dgn sate kan memang sedap so tu yang diaorang ter’pikat’ sama :-). Most of the others makan sandwiches aje for lunch (Mat Saleh kan 😉) but The Other Half hari2 bawak leftovers so bau pun hari2 bertukar2 lah. Kadang2 The Other Half mengadu gak kat I yang he misses having sandwiches for lunch macam dia kecik2 dulu, hikhikhik…..

Because The Other Half dah kata dinners I masak lovely, I pun berfikir panjang lah nak masak apa yang sedap2 for dinner tonite. Susah weh nak memikir hari2 ni ;-). After much deliberation, I decided to make roast chicken with all its trimmings. Kalau orang lain sure dah masak yang lagi gempak kan :-).


Inilah rupa my roast chicken. I made mustard, lemon, garlic and rosemary roast chicken. Senang aje nak buatnya.

(pink silicon tie tu untuk tak nak bagi kaki ayam tu terkangkang seksi masa tgh bakar. Bila nak makan, tinggal untie aje and it can be reused 🙂).

I went outside to my backyard and pergi petik about a handful of fresh rosemary. Pastu, pergi pulak ke pokok lemon sebelahnya yang dah kemetot tu and found 1 yellow lemon. Chewah, mentang2lah pokok rosemary and lemon ada kat belakang rumah, eksen terus I kan! Kahkahkahkah…..

Pastu I basuh rosemary and lemon tu and peel the lemon skin. Pastu kan chop up the rosemary, lemon peel and a few cloves of garlic sampai halus. Then in a bowl, tuang olive oil sikit, campur dgn seeded mustard, add some salt and then masukkan rosemary+lemon+garlic cincang tadi and kacau sebati.

Pastu, sapulah kat seluruh ayam inside and outside and under the skin ye.

Chop up some potatoes and sweet potatoes and put them around the chicken and bakar at 180°C until masak.

I rajin jugak tadi, buat gravy sekali. But, gravy tu I buat guna juice yang keluar from the chicken masa you roast dalam oven tu and collected in the tray. I put the juice in a saucepan, tambah 1 sudu tepung and masak atas api perlahan. Bila dah pekat, tambah air sikit and then add kicap masin and pepper. Jadilah gravy yang sedap :-).


Inilah rupa my pinggan, we had roast chicken with roast potatoes n sweet potatoes, corn and apple n green salad.

(The Little Misses love fruit+greens salad so tadi bila diaorang nampak apple in the salad, terus makan sampai habis. I guess the fruit makes the green leaves bearable to eat kot 🙂)

The Other Half makan beria2 which means it’s another lovely dinner lah kan ;-). Miss 6 said, “this chicken is really yummy, Mummy!” Anak I sorang tu kan, semua dia kata sedap, hahahaha…..

We have finally sold 22 bars of the chocolates and we got about $48 for them. The Other Half put them at the reception area at his office with a note attached “Pay what you think is appropriate, max $2.50” So, dapat 48 dollars for them tu kira sangat lah bestnya because we weren’t expecting anything. We were just going to buy them all ourselves at first, hehehe. Phew, thank goodness that fundraising bit is over. I wonder what’s next?

I’m going to put up the recipe for the Continental Bread that I made the other day. Roti ni takde susu or gula or telur so dia tak selembut roti yg bersusu but still gebu. But sesuai lah untuk makan with savoury stuff jugak (makan dengan butter aje pun sedap).

I dapat recipe ni dari buku recipe breadmaker I tu and dapat 2 very big loaves.

Continental Bread



  • 420mls air (kalau buat pakai tangan, guna air suam)
  • 1 tablepoon (20mls) minyak masak (I guna olive oil/canola oil)
  • 2 teaspoons garam
  • 500g (3 1/2 cups) tepung roti
  • 250g (1 1/2 cups) tepung gandum
  • 2 tsp instant yeast (mauripan or yang seangkatan dengan nya)

*Measurement ni untuk cuaca OZ so kalau kat tempat lain, maybe you kena adjust sikit air and tepung tu, so dapat dough yg lembut.

Cara2 membuatnya:

-Kalau menggunakan breadmaker, masuk kan bahan ikut turutan BM tu and boleh guna function ‘continental’ or function ‘dough’.

-Selepas selesai ‘dough’ cycle, knead the dough and shape ikut citarasa sendiri. I buat jadi 2 big free-form loaves aje. I cuma letak atas tray. Let it rise  for 30 minutes or longer until double in size.

-Kalau takde BM, larutkan yeast dalam air suam sehingga berbuih (maybe around 15-20 minutes). Then add the olive oil to the yeast mixture.

-In a big bowl, add both flours and salt, mix well. Add the yeast mixture to the flours and uli sehingga adunan tak melekat kat tangan dan dough tu spring back when you press it.

– In a clean oiled bowl, let the dough rise until double in size. Bila dah rise, punch and knead it again for about 2 minutes and shape the dough into equal pieces. Let them rise again until double in size.

-Sebelum bakar dalam oven, brush the top of the bread with milk and sprinkle plain flour on top to make it crustier (tak buat pun takpe, I tak buat 🙂).

-Bakar in 190°C oven for about 30-40 minutes depending on the size of your bread loaves.

Ada 1 more loaf lagi kat dalam fridge tu from when I made it the other day :-).

And for tonite’s dinner, I made beef parmigiana which is crumbed beef schnitzel top with tomato salsa/pasta sos and grated cheese and grilled until the cheese has melted. makan dengan fries and cucumber+carrot salad.


Gambar jauh, nampak meleleh2 cheese tu kan. I guna colby cheese which is milder and ‘stringier’ than the normal cheddar cheese. Kat sini cheese tak lah mahal mana, about $10/kg block. Tu yg cepat no habis kat rumah ni.

>Nachos and Choc Pudding

The Other day, Tasha asked me to show her how to make nachos. Since I can’t do it personally, face to face, and I’m not famous enough to video record it and put it on Youtube ;-), so I’m just going to show you how to do it step by step through photos aje lah ye :-).

Nachos my style.


The ingredients I used:

400-500g of beef mince

1/2 brown onion, diced

1 clove garlic, crushed

1/2 teaspoon each of paprika powder, cumin powder, coriander powder

chilli powder to taste (I guna 1/4 tsp aje sebab budak2 tu tak tahan pedas).

4 tablespoons tomato paste/ tomato puree

1/2 cup of canned red kidney beans

1/2 cup water

1 bag of corn chips

1 jar of salsa

1 cup of grated cheddar+mozzarella cheese

In a frying pan, heat about 2 tablespoons olive oil. Then saute the onion, garlic and the spices sampai naik bau.


Then add the beef mince and cook until all brown. Add 1/2 cup of red kidney beans.

Then add 4 tablespoons tomato paste (kalau susah nak jumpa, guna tomato puree pun takpe), 1/2 cup water, garam to taste. Masak sampai kuah dia pekat.

On a tray, chuck the whole bag of corn chips. Ini rupa1 type of corn chips and salsa yang I guna tadi.

Scatter the mince bean mix on top of the corn chips, top it with salsa. Last sekali, tabur grated cheese on top.

Masukkan dalam grill and grill until the cheese has all melted and the corn chips slightly brown.

Nachos ni selalunya makan dengan sour cream, shredded lettuce, diced jalapeno pepper and guacamole.

Tapi tadi I makan dengan avocado salsa mixed in with sour cream :-).



And I made self-saucing choc pudding for dessert (sebab terliur tengok TTM nya choc pudding, hehehe). I guna recipe ini.



>Masak kari dalam oven

Haritu ada ramai yang tanya macam mana I masak kari dalam oven. Actually sama aje macam masak atas dapur tapi lagi hassle-free sebab tak payah kacau2 selalu takut kari tu ‘geseng’ or burnt and berkerak. So, tak lah susah payah sental bontot periuk, hehehe. And yang paling bestnya, boleh masak lama berjam2 dalam oven while we go net surfing, lipat kain, vacuum rumah, keluar pergi shopping :-). Bila dah siap, the meat will just melt off the bone and the kuah akan pekat abis!

Bila I masak kari, I takde recipe khas, semua jenis main campak2 aje dalam periuk. But adalah a few spices yang memang I akan sentiasa guna, kalau tak guna, I rasa macam takde oomph pulaknya (untuk tekak I lah).



-Bawang merah (I guna bawang besar sebab bawang merah yang kecik kat sini tu teramatlah mahalnya)



-rempah sekawan (kayu manis, bunga lawang, buah pelaga and cengkih)

-daun kari (sian I kena guna yang kering nya, hehehe)

-asam keping

-brown mustard seeds/biji sawi

-fennel seeds (jintan putih?)

-minyak secukupnya

-biji halba ( I tak letak banyak, about 5 seeds kot)

-rempah kari (I guna rempah kari daging Baba’s but I tambah lagi serbuk ketumbar, serbuk cumin and serbuk chili)

-tomato paste (kalau takde tomato paste, I guess you boleh guna tomato puree or chopped up freh tomatoes)

-salt and sugar

-coconut milk, less than 1/2 cup (nak add boleh, tak nak add pun takpe. Ganti dgn air kalau tak nak santan)

-daging bertulang 1 kg (I guna gravy beef on the bone)



-Tumis bawang, garlic, ginger, rempah sekawan, mustard seeds, fennel seeds,daun kari sampai naik bau.


-then masukkan rempah kari(dan campuran serbuk rempah yg lain tu) and biji halba yang dah ditambah air sikit jadi paste. Masak lagi sehingga lah kari tu pecah minyak or masak.


-Masukkan daging dalam periuk and then kacau hingga sebati using medium heat.


-Bila dah agak2 daging tu semua bersalut and dah ada bahagian daging yang brown coloured a bit, transfer the whole lot into a casserole dish.


-Add santan (I guna tak sampai pun setengah cawan for 1 kg daging), tomato paste, garam, gula and asam keping. Kacau bagi semua bercampur sekata. Then cover the casserole dish dengan aluminium foil and masak dalam oven at 160C. Kena cover sebab tak nak bagi daging tu kering.


-I tak tambah air masa ni sebab I normally tunggu sampai sejam terakhir untuk tengok cukup kuah ke tak. And I tak letak kentang awal2 sebab I tunggu daging tu dah lembut baru I letak kentang.

-Berapa lama you nak masak kari tu terpulang on jenis daging yang you guna, saiz daging yang you potong2, and pekat mana kuah yang you nak.


-Ini kari yang I masak for 4 hours tak silap sampai kuah dia betul2 pekat and daging dia just melting off the bone. Lagi lama you masak, lagi pekat kuah dia and kaler dia lagi gelap sebab I guess santan tu dah betul2 ‘hilang’ sebati dengan kari kot.
